WOT Throttle Switch problem

Hello everyone, I have about 77,000 miles on my E320 RWD. I have recently come across a strange problem. It happens whenever I slam the throttle down to try and quickly pass someone so I hit the WOT switch. Twice so far after that happens the car goes into kind of a limp mode and it takes like 5 secods to get a response from the throttle. I can even push the throttle all the way in and after a few seconds it slugs along. It will accelerate but it only under partial throttle.

I can restart the engine and restore normal throttle behavior.

Has anyone else experienced this? It sounds like a faulty throttle sensor to me but wouldn't that throw a check engine light?
