I'm sure there is a lawyer involved somewhere that resulted in this not being a normal feature. There is probably some liability to telling someone they have exactly 1.0 gallons left, etc. I know for general aircraft there is some unusable fuel in every tank, and I'm sure the same is true for our cars. The sending unit might report 0.5 gallons left but the engine might quit at 0.5 gallons.
I've also been told its bad to drive until you're almost out of gas because sediments settle at the bottom of the tank and it isn't good for the engine.
I've driven my E550 until the range stops showing a number and tells you to fuel up immediately. I'm not sure how much gas is left at that point but I do plan to visit SD and get this activated.

Like I said I drove once until it went down to 0 miles/0 gallons/0 liters.
It is .2 Gallons or 1 Liter (depending if you have your CI in metric or US setting) accurate. How accurate it really is no clue.
You are right you shouldn't drive to all the way empty. On the other hand there are fuel filters put in and I'm sure they are in for a reason and if you have no choice but driving until it's basically empty then I'm sure it won't damage anything unless that is one of your hobbies to always drive until the tank is empty.
Funny thing is that it is also disabled by default in Germany where less lawyer are around to sue for everything a human can think off.
