Is it fair to assume that if there are no warning lights on the dashboard when starting a e500 then that means it is in good working condition at that point in time? Is mercedes warning system very finicky so that if there was ANY issue at all some sort of warning light would come on? thoughts?

Yes with a caveat. Emissions related or safety related (i.e. brakes) will light up the dash under "check engine" or the brake-related indicator.
A bad lightbulb will show up on the cluster display. When the bulb is replaced, the instrument cluster message goes away but a minor fault code "f" will remain in computer memory until the fault code is cleared using the diagnostic system. This particular code will not be visible to an ordinary OBD2 code reader.
