what are some the symptoms for the a torn boot that covers the pistons in the brake system and does the caliper have to be replaced?

Its a dust boot. It does not hold the fluid back. A torn boot will allow dirt to get into the Caliper piston area. You should be able to just have the boots replaced if all else is good.
