Get charcoal...
I say that and MY CAR HAS ASH. You need the contrast in Brilliant Silver.
I have Pewter/Ash. The ash shows dirt especially if your footwear comes into contact with the door thresholds.
My car has black all weather mats, which make a nice contrast.
No matter which, you get a dark dash top and light colored interior A, B, and C pillars, and sun visors so you must still be careful.
Another problem with Ash (I haven't had because of extra care) is dye-transfer from clothing to the seat material. It's a problem that can be permanent.
Your only charcoal panel with sun exposure will be the rear shelf, so get charcoal and just make sure you also get the power sun shade.
Aging.....in the long run (5+ years) I think Ash will hold up better if well cared for. I have never seen an old car with black leather that didn't look awful.

Silver Ash All the way
I had Silver Charchol in my 00' CLK 430 and with the black birdsye, its too dark looking (and actually looks cheap)
The ash is a nice contrast with the dark wood and if you are a car cleaning fanatic (which if you post here you probably are) than the keeping it clean wont be an issue- just my 2cents. I also like the monochromatic look of the silver and ash combo, especially with a pano roof
