BMW rims on Mercedes

i have a set 20" Velano rims I acquired from my brother. I understand the pattern of the BMW is 5x120 compared to Mercedes 5x112 but would spacers and/or adapters be possible?

This will be going on a 2013 E350.

What's the offset like? And how would this affect driving/handling?

try adapters
from 120 to 112 , and i would check on ebay im sure its got some. and as far as safety they should be okay ..... ? i think so

Check fitment, offset, use an adapter and you are fine. Something like this:

Keep in mind that when you add spacers it lowers your offset, figures 1" is equal to 25mm..with that being said, a wheel that has an offset of +40 will sit in the fender well like a wheel with an offset of +28 if you run .5" spacer....I said that to say that adding spacers probably won't solve your problem because it will push the wheels past the fender..unless thats the look you're going for...I suggest getting a new set of wheels properly spec'd for your vehicle...
