Service on weekends
Is it like this for all MB dealers? I'm not taking a day off just for service and a loaner car.

Interesting OP does not want to take the "day off" to get car serviced so he is off on Saturday, but expects service advisors, technicians, business and other staff to work on Saturday? Not to mention some supervisory staff.
One aspect of this is that all of the above personnel are probably going to be paid overtime, which will have to be passed on to customers. Sales dept. is on commission, so probably not overtime involved. Also might be considerd "professional/supervisory" and therefore no overtime.
If dealer provides a loaner, wouldn't it just take a couple of hours to drop off car and get loaner and then turn it in and pick up car?

Hair salons are often closed on Sunday and Monday - no employees at all so they can be open on Saturday.
Incidentally, I seriously doubt I am the "most negative guy on this forum that always finds a gripe." Maybe the most realistic, practical, intelligent?

Yes I would want to hang with myself and people like me. Realistic, practical, forthright, intelligent, knowledgeable, etc. Not expecting others to sacrifice in order to satisfy my every whim.
If they start doing business only on Monday to Friday 8-5... then what...? They don't do that because they get more business during after hours.
I'm simply asking why can't the car dealerships have different work hours just like these... may be they will get more business. Certain car dealerships are open on Sundays (albeit only for sales). I say that's the start of an excellent practice.
May be I should add one more criteria while shopping for cars next time .. dealers which are open for service on weekends...

I drop it off in the AM (M-F) and drive away in a loaner. It's not super convenient to take the time in the AM, but I make it work. It's not that big of a deal to schedule my day accordingly. If I have to cancel and reschedule, it's no biggie.

As Johnny Rad stated, the techs may be rushed on Saturdays, especially for shops doing 1/2 days.
Ironically, my dentist and family practioner offices all work 4.5 days per week now.
