I can fold my right rear seat without the passenger seat going straight upright. Now

Exactly, but as these cars came from the factory the passenger seat could not be adjusted back far enough to sit in it.

Complaint:
After folding down the right rear seat, the customer cannot adjust the front passenger seat to a comfortable position. The backrest is angled too far forward.
Cause:
This is a normal setting from the factory. Originally, this was put into place to ensure the rear head rest would not interfere with the Weight Sensing System in the passenger seat. Now with the new bladder Weight Sensing System, this function is no longer necessary and can be disabled safely.
Remedy:
In Xentry, navigate to the following menu:
ESA 'Front Passenger' - Electric seat adjustment 'Front passenger' (N32/2) -> Adaptations -> Configuration -> Manual Settings -> Seat adjustment
Set the coding "Adjustment range limitation for preventing collision with rear seat" to "nicht aktiv"
that seems pretty straight forward.

I don’t have Xentry. I will run my Launch scanner soon and take screenshots of provided options. “Adaptations” was not an option when I tried Launch yesterday.

Make sure you look at the passenger seat as the driver's seat does not have this option, at least my car does not have it. Driver's seat moves back with no problem.

In your original post you say "I could stop front seats from moving when rears are folded". Do you really have this problem with both front seats?

In my 2012 W212 both front seats move forward when the back seat is unlatched. On the drivers' side I could still slide it back after the rear seat is folded down, but not on the passenger side. So I just unplugged the sensor (in addition to closing the latch) on the rear passenger seat which then gave me full adjustment capability on the front passenger seat.

You just need to remember now to make sure the seatback is locked in the upright position as you do not get the warning in dash.

Just confirming that the driver seat does move back with the rear seat back in our 2011 Wagon.

I know it’s mentioned multiple times in this thread, but I somehow missed it. Lol.

I will have to upgrade my scanner again to one that can program. I’d like to code the passenger side.
