Got in contact with a Mercedes tech, the solution is:
* Press power button without foot on brake.
* Activate the trip display, showing the odometer.
* Hold the "House/back"-button on the left side of the steering wheel.
* While holding "House/back", hold the left "OK"-button.
* Voila, service mode.
* Select Dynamometer mode, activate.
No ABS, no ESP, no pre-crash system (white noise from the speakers and seatbelts that really push you into the seat), and at speed no servo assisted steering either.
But very very sideways

Make sure you're not turning on the ignition. The engine should NOT be running, the entertainment system should be on, and the various indicators (low battery, low oil pressure, abs error, all that stuff) should not be on.

It's for use on a dyno yes. It disables ESP, ABS and power steering. It also stops the car from tightening the seat belts and playing white noise in the speakers on volume 11 every time it thinks you're about to crash. And when driving on an ice track day thats pretty much every turn...

You can turn the nannies off (except traction control) through the settings of the onboard computer. Use the left steering wheel controller. On the AMG models there is a dedicated button on the console to do the same thing.

I scrolled through all the settings, including the "assistance" menu. Couldn't find anything related to the pre-crash system. I suspect it can't be switched off, just like the ESP system.

make sure you are holding the home/back button for the drivers display not the command, it varies wether your car is right/left hand drive. When you are holding the home/back button press ok when the menu pops up. Alternatively this video may help.
