Intelligent Drive Assistance Overcorrects trajectory.
My 2018 E300 has the Intelligent Drive Package, with Active Steering Assist.
While very useful on the open highway, I've noticed that it corrects trajectory a little more (and a little more often) than I do, which means it overcorrects slightly and then has to correct back, and so on.
Do you know if this is adjustable by the dealer, or if there is a software update available for this?

That's my understanding as well. Not ability to dial back the correction rate and no expectation of software updates to correct it. Unlike Tesla, when they come up with a better system we'll all have to buy new cars to get it. I also find using the turn signal to change lanes causes the car to "dive-bomb" the desired lane in an alarming manner. And sometimes it flies right thru it towards the edge of the road or center divider.

DO mention it to your dealer. There are indeed adjustments which can be made to Distronic. I'm not sure exactly what they are, but when I got my W212, Distronic was braking terribly late, then had a nasty issue of lurching forward if Distronic had stopped the car and the engine came back on. Dealership was able to fix it.
