Since you are seeing 62mph on your car's speedo, my assumption is a KPH default setting in either Apple Carplay, Wayz, or possibly the iPhone itself. I would check settings in all three.
Well, does it actually say mph or km/h on the screen below the speed? My guess is your unit setting is wrong in the Waze settings under General. Make sure it's set to Mile.

Mine is a 2017 E400 Wagon. I purchased the car as a CPO 5 months ago, and the car had the original COMAND software from 2017.
It had numerous issues, including this MPH/KPH issue with Waze.
My dealer updated the COMAND software to latest available, and it fixed the Waze MPH/KPH issue. Therefore I concluded that the problem was with the car software, not with Waze or Apple CarPlay.
Check to see if you have the "Disable NFC" option in your menu. If you don't, then you have an older version of the software.
