I have a 2020 GLE350 and i really like the MBUX system. Nice to be able to talk to it and tell it what you want vs searching through screens to turn on the massaging seats for example. I don't use the touch screen just because of the fingerprint issue. But so much easier to just say Hey Mercedes turn this or that on. MBUX grows on you, in my opinion. I am hoping the 2021 G will have MBUX.

Ultimately MBUX will be just fine in the G as you have so many analog alternative ways to use the system. BUT...
I like the look of the mbux controller pad. However Touch Screens in cars is a terrible experiment that will go away. It is dangerous to take your eyes off the road to touch something that is slightly moving with bumps in the road. Your arm extended is not precise and while you look to touch, the screens are never going to react perfectly.

yes you can talk to current G and turn on massage for driver or passenger as well as many other commands for calls, navigation, etc.
