An all wood steering wheel is very dangerous in an accident. It can splinter badly, and in the late 60's, I saw a Triumph TR-3 where the driver's body collapsed over the wheel, it splintered, and it killed him.
Most good wheels are a mixture of steel, leather, and wood.
