Does anybody know if there is a built in way to monitor the transmission temps through the dash or center screen on a 2021 GLC300 or do I need to use an external ODB monitoring tool if I want to do that?
Only in AMGs as far as I know. AMGs show tire pressures, tire temperatures, engine and transmission oil temperature all on one screen. Are you towing? Otherwise transmission temperature isn't something that's relevant to normal drivers.

Oh, I think you might have just answered my question with your screen shot! I can monitor tire PSI and temps in my dash between the two main gauges, so that's cool. I also have this screen on my center screen. I always thought the graph on the far left was coolant temp, but now I realize it might be the transmission temp? It's the same as the icon in your screenshot from the AMG.
Yes, I will be towing a small teardrop camper trailer that is under 2000lbs, well under the 3500lbs rating of the GLC. I just want to keep an eye on things since it's REALLY hot out lately.

Yep, that's transmission temp on the left, and engine oil temp on the right. The coolant icon looks like this:
