Mismatched tires
Took my GLE 350 4matic in for some warranty work. Dealer replaced two tires. The new ones are Pirelli Scorpion Verde AS. The factory ones are Pirelli Scorpion Zero AS. Have about 7500 miles. Will this cause any issue other than the look a little different?

There is a tread wear tolerance in many cases with modern vehicles rather than a mileage calculation. As I recall, most recommend all tires be replaced at about 20% or greater wear. At 7500 miles you were close to or over that amount of wear.
Another question is what’s going on with the tire? You have to wonder why two went bad and now that tire is no longer available.

So here’s what is happening for those with the Zeros -
Service Manager said that MB corporate is no longer supplying the Zeros. Will use Verdes instead. Said it was an “updated” part. Would not budge on replacing the other two tires. They said “Mercedes says it’s ok to mix these tires”. I’m not super happy with my dealer right now. This GLE is the 4th new car I’ve purchased from them...

You need matching tires. Even Mercedes own CPO and lease return requirements require matching tires. I think they made a mistake, or a lazy service person took a shortcut instead of delaying your pickup while they wait for the correct tires to arrive.

Mixed Pirelli tires
The Verdes sacrifice some ultimate performance for longer life and better fuel economy. While the mixture is unlikely to be a significant safety risk, you will not find any tire manufacturer recommending it. Both tires come in "H" and "V" speed rating versions - I assume you have the V.
Verde AS: "The Scorpion Verde (Italian for green) All Season is Pirelli's eco-friendly Crossover/SUV Touring All-Season tire developed for the drivers of crossovers, sport utility vehicles and prestigious pickups.
