I just purchased a 2018 E43 AMG. The Carplay screams at max volume with every transaction, even after lowering the volume (in a panic!). This occurs with both my iPhone 7, and my wife's iPhone 6S. I had a loaner for a while -- a 2018 GLE450 -- and there was no issue. The techs at two dealerships suggested that it's a compatibility issue -- a "glitch" -- with the new MB platform and the CarPlay interface. When will this "glitch" be fixed? As it stands, I can't really use my CarPlay, as it's anoying and distracting. One would expect more from a $90K car, methinks. Thanks for the help.
I haven't run into this with my 2018 GLE, but I don't use CarPlay regularly. If it's like most other apple interfaces, you may want to try adjusting the volume as the super loud sound is playing. There is a separate volume for notifications that is usually only adjustable when they are playing. Once they've quit playing, you're messing with the master volume.

I had the same “volume too loud” issue with a 2017 E300. It seemed to be limited to google maps though. When I lowered the volume during Google maps voice guidance, it would lower but then go back to loud again when the guidance spoke next. All other apps including apple maps did not have that problem. I just bought a new 2020 E450 and it has the same google maps volume problem. I also have a 2017 GLS but the google maps volume works fine on that one. It seems the problem is limited to the E class 2017-2020.
I found these Workarounds that help a little:
1- In Google maps settings on the phone I changed Guidance Volume to “softer.” The volume is still on the high side but not as loud.
2- If you listen to music that is on your phone instead of the radio while in carplay, the google maps volume stays low after you lower it.
