GLS Engine Bay Cleaning
I see many videos on YouTube on how to clean the engine bay and they use a degreaser which is fine, however, I'm sceptical about the part where they rinse it down with a pressure washer. I wonder has anyone cleaned their engine bay with their Mercedes and is there anything I need to cover or protect? Sorry, I'm a new and it's better to ask than doing something.

No cleaning products.
A microfiber cloth dampened with plain water is all you need.
I keep my engine bay fairly well detailed. No leaks at present. If you have any leaks with your 167 they will be covered by warranty and I would not remove the leaks so the dealer incompetents can’t argue with you.
They will refuse anything, given the narrowest window of opportunity. Their profit on warranty work is less than other work such as pouring a $10 bottle of fuel injection liquid into the gas tank and charging $120 for it.

I wouldn't even clean under the hood for the reason that chassis says. It seems that the owner opening the hood is probable cause for a warranty denial later. (Although my current service tech is excellent, and I am beginning to trust him... praying he doesn't leave...)
