2004 ML350 coolant temps

Hi all I'm new to the forum and also fairly new to owning an ML350 so I thank you all in advance for your help. I have a question about the operating temps. Today was a fairly warm day for the UK at around 30 degrees according to the thermometer. Normally when I driver the vehicle the coolant temp sits between 80-85C. However today during a prolonged drive in the hot weather (450miles) I noticed it was fluctuating while driving between 80-~95C and then going back down between those values. Is this normal behaviour for these vehicles in the warm.

I found some info earlier that stated the following

"Short-circuit mode (< 87 °C) (Thermostat is closed. No coolant to radiator, all recirculated back to the engine.) Mixture mode (> 87 °C < 102 °C) (Half Open. Some water recirculates, some redirected to radiator for cooling.) Operating condition Mode (>102 °C) (Fully open. All coolant sent to radiator.)"

is this true or can there be a problem with my coolant system.

Were these readings at hwy speeds?
