Open/close windows and sunroof with air-recirculation button
This is called convenience closing/opening feature. You can open/close all windows and sunroof with 1) your key, 2) recessed sensor on any door handle, 3) holding air-recirculation button for a couple of seconds.
I can do it with the key and sensors on door handles. But holding the air-recirculation button is not doing it. How do you get it to work like that?

It won't. The air recirc button closes the flap on the HVAC system. It has nothing to do with the sun or pano roof.

I don't see any mention of using the air recirculation button to open/close the windows in the owner's manual. Where did you get this information from?

I checked the iOS version of the digital manual and I see the screen that you referenced. However, the digital manual appears to be the UK version of the owner's manual and thus this might be a UK only feature since it obviously does nothing on US cars.

The ML350 does have feature which let's you closed all windows and the sunroof by pressing and holding the recirculate button.
You may then re-open all the windows and sunroof to their previous state by pressing and holding the recirculate button.
This feature is designed to be used while driving. Should you enter tunnel or drive behind another vehicle with a lot of exhaust fumes you can quickly close all open windows and recirculate the air in the cabin.
This is also described in the manual under the section called Controls in Detail. Under the Air Recirculation part. Pages 209 and 210 of my ML manual.
This is different than the summer opening feature for opening the windows from the exterior of the car

The US, being such a litigious society as we are, miss out on yet another feature. I guess this gets thrown in w/ also not being able to close the windows/sunroof from the remote but they're able to in other markets. Locked tv while in motion, disclaimer screen upon each startup...

Would it be nice to have these things enabled on STAR? I think it is just programming but I might be wrong.

It can be done, figured out mine this weekend. Have to change to settings in the HVAC controller. Change country code to ECE and enable convenience closing with recirc. Only issue is MAX COOL is disabled, since this is a US feature, but REST function gets enabled if your have the electric coolant pump.
