Removing Engine Cover

How is the engine cover removed on a 2001 SLK 320?

I believe your engine is the same as mine. It's actually the air filter housing. Grab the housing on both sides where it's rounded and pull straight up. Give it a sharp jerk. It's held on by friction with four clips that attach to rubber posts. There's also a hinged portion on the front of it that has a plastic clip to a piece on the engine but it comes off easily with the rest of it.
