On my W210 E55, the right-hand pair of windshield washer jets shoot high. It looks like I could pry them down and put a shim between the assembly and the hood, but I'd rather do it right. Is there a right way to adjust the jets downward?

Easier than that, use a pick or something similar. The jets are of a ball and socket design, you can easily move them to where they spray like you want them to.

Very easy, even a toothpick will work.
The slightest adjustment will do the trick.
