A/C's not blowing cold air

I was sitting in front of a restaurant for about 20mins with the a/c on while the car was running; when I noticed the car running hot. Once the car cooled down the coolant was checked and didn't need filling. Once it cooled, I drove about 5 miles home with the a/c on and parked it. It didn't run hot on the way home.
I drove it as usual, over the next few days without any overheating issues. Then after about a week, the a/c just stopped working. 1 month later, no overheating issues at all but, a/c blows hot air. What could be the issue?
