That’s a month before summer, so the weather will be perfect for your road trip. There’s water between Melbourne and Tassie, but don’t worry there’s a ferry (ship) to take you there! Along the coast between Melbourne and Sydney will be great touring on a bike. Plenty of things to do and see along the way. It’s a very popular region of south east Australia.
