Low Coolant Level

If the car was not driven much, evaporation be playing a role. How are your DIY skills? Spend some time (hours, over the course of few days), scouring the vehicle for leaks.
Start with the obvious areas near the reservoir(s), water pump, hoses and radiator. Do the inspection with engine off/cold and with engine running/hot. Look under the car for leaks, or evidence of leaks.
Does steam come out the tailpipe?
Open the oil fill cap, is there anything that looks like chocolate milk?
Do you smell coolant anywhere inside or outside the vehicle when the engine is running?
watch your temperature gauge to see if it gets near 100 and starts bouncing around that’s when the coolant warning will come on
It could also be that the coolant level was just a bit low . Now that you’ve filled it just be careful to check the level and see if the warning comes on again
