I've notice my 2001 S430, when turning, does not return the steering wheel by itself and straighten out the car. I'm not a mechanic but I've heard the caster being off can cause this? Or is this just the way they are?

No - the W220 returns and centers the steering wheel all by itself (like all other car models).
Cause may be:
a) stiff or corroded joints/bearings of the steering drive shaft
b) the steering rack which has a centering device and position sensor
c) the front drive steering and suspension components being "off"
d) wheel alignment
Since you say you are not a mechanical person, don't follow guesswork but get it checked at a shop (not necessarily MB)
