I have done an extensive search on how to remove the glass and housing on my facelift W221, but I cant find it. I used the technique I found for the W212, where you remove the upper housing first, and that resulted in a broken fastener since on my mirror there is a screw behind the glass that needs removal so you have to remove the glass BEFORE the housing. So my question is really, what is the correct method to remove the mirror glass?

with the key on fully "dip" the mirror, stick a wedge in the top and it pops off.... easier than it sounds
by the time you do this your see how its fitted, if really cold it'll fight more, I'd put some wd40 / silicone lube there to help the clips release

check some pictures on ebay, will give you a good clue how they did it,
