Air freshner
Does anyone have any suggestions as to how I can get rid of the scent in my used s-class? I’ve removed the air freshner canister that came with the car but 2 months later and the smell is still there.

How about shampooing the carpets and seats? Ozone generators get decent reviews, google or amazon would be the source for one of those.

Ozone machine. Always good to vacuum, detail or possibly shampoo carpets but the ozone machine is the real solution for odors. Try 15 mins at a time and do not breathe in concentrated ozone!! Ventilate car after each session and before entering vehicle....

Get some baking soda spread it liberally on the carpets and vacuum up later.
A number of people are recommending ozone generators. I've used one and it doesn't work as good as baking soda.

I don't like the shampoo smell my car gets after the detailing as after a while it transforms into an unpleasant smell.
What I do is I get the carpets out and blow air on them to get rid of the dust and particles on them. I also vacuum the floors and beneath the driver's and passenger's seats. I change the AC filter regularly as well.
Finally, the odor could come from the HVAC system. There are tons of cleaning products that can be sprayed into the air vents and blowing motor to get rid of the odor, admittedly I've never used one. See this video may provide you some insights:

remove the pollen / air cleaner elements and squirt the cleaner in where it matters in the passenger footwell - then fit NEW charcoal impregnated pollen filters
if I don't use the rear AC monsters breed and it makes a smell - leave both running and freeze them to death every drive the usual smell is rotting bacteria on the evaporator.
It comes from dead human skin, legionella, other rotting dust, fluff and environmental debris. A perfect cocktail resides in the heater system of pretty much any age car. With monster growth needing time, food, moisture and warmth.
Its worse when you fiddle with AC, like switching it off - the monsters stop getting cold and you warm the moisture on the evaporator. Leaving it running like its designed to, slows / kills the speed they breed at. The age bit comes in as the car's had longer for the dead skin cells to build up their food supply.
of course it can be other smells from under the bonnet like antifreeze leaks [can also be internal at heater] or burning oil or not for long, CO from a leaking exhaust

Replace the cabin air filters for sure. I also use stuff made by Chemical Guys that work great, especially the leather scented odor eliminator. I have also tried the fogger you pop on the floorboard and it circulates throughout the car and hvac system. This will get rid of minor used car odors permanently, but it really depends on how badly the previous owner trashed the car. I bought a car a while back the price was right and I though I could clean it up but no matter what it did and how many times I deep cleaned ozoned and shampooed the carpets, the smell and stains would always come back. The previous owner just trashed/neglected it getting it wet, spilling coffee, leaving dog hair in every crevice I ended up getting rid of that car and I wouldn't go anywhere near something in that shape again no matter the deal. Hopefully its not that bad, give this stuff a try, good luck.
