Metropolitan Detail is now my go to shop- I've gotten details and XPel done by them in the past. Tell them Nathan sent you and they'll get you good pricing and their work is also very top notch. John and Benjamin are very stand up guys and they really treat their customers well.

I've also heard good things about NWAS but they're a tad too far for me.

Yes, I did. Metropolitan Detail, another reputable local shop, quoted (surprise, surprise!) the same $8000 and also required a removal of door handles, mirrors, all trim, and badging in order to "provide high quality results". I was told that (quoting) "Removal of trim and handles is the right way to do this".

I bet it is just very convenient for the installer to cut the film right on the vehicle, as opposed to worrying about templates and cutting them in advance.
