Reading Speed limit signs.
Also - I've experienced that in residential area's that the speed limit goes from 25 MPH to 65 MPH despite there being no signs posted.
Is there are channel to feed this kind of information back to Mercedes so they can improve the functionality ?

For a couple of reasons:
1) Speed limit change exactly when car is kind of perpendicular to the sign.
2) In rare cases I've seen the sign being obstructed by a truck in which case the speed limit doesn't change
3) The car does pickup speed signs that are set up for road construction.
4) One of the sign's that my car fails to pick up has a failure rate of 95% but still manage to read the right limit 5% of the time.

Our cars accuracy of reading the signs is about 90%. In Europe I have seen another logic that if no sign was seen for the last few minutes, it re-establishes the previous default speed limit. For example a lower speed limit sign for construction was detected but not the cancellation of the lower speed limit at the end of the construction zone, if will automatically go back to the prior speed. It does it since there is a requirement in Europe to show a reduced speed limit in certain repeat intervals. The system also recognizes conditional speed limits (x-speed when wet or with fog). Never seen that in the US.
Personally I find it helpful but a nuisance when using Distronic where the cars is automatically throttled when a lower speed limit it detected. This setting can be disabled of course...

My 2016 displays "20 mph School Zone" when I drive past these signs. Makes me think it was captured in some database used by the nav system and not read by the car in real time.
