I've been dealing with TMO and MBUSA for 3 weeks on this. They told me my account was migrated but somehow my car still says "No data package" and any online service would trigger the "internet connection unavailable" error...

Could you ask the dealer to show which components are missing and who at the workshop is able to solder those missing components to the control unit circuit board? I bet they cannot even open the box.

This Mercedes Me is poorly built and supported elsewhere too, not just an MBUSA problem (doesn't make it any more acceptable though).
Our E-class cars have received some on-line updates, both the 2017 and the 2021 cars. No experience about the 223 (yet).
As a temporary solution, I got a Verizon hotspot device to use in the car instead. However, for some reason, while my phone sees the hotspot, the car does not. I have done just about everything I can think of and it still doesn't see it. Any ideas?

I guess you followed the manual to connect the car to an external hotspot? The US manual is a bit vague, states that most features may be country dependent. Odd because this manual is not intended to cover all markets. Are they talking about Canada being different to the US?
Open the hotspot (You can use either QR, password, or other methods)
Once connected using your choice of options (i.e. password, QR code, etc.)
go back to your phone and click settings, wi-fi and the MBUX #### and a screen should popup giving you the option to register for the T-Mobile service
If you back out, you'll have to power off vehicle and phone and start again

NOTE: YOU MUST "FIRST" CONNECT TO THE WEBSITE THROUGH YOUR CAR WI-FI -
ONCE YOU REGISTER AND VERIFY YOUR EMAIL, THEN YOU CAN CONNECT TO THE ABOVE WEBSITE FROM YOUR REGULAR WI-FI OR LTE TO CONTINUE SETUP
Once you register"AND PAY" - all connected devices will work normally without you having to log in again. You can also add more than one vehicle to the plan.
You'll register > verify your email > then be able to select a mobile hotspot plan > make payment > and then your services will start immediately after processing
Payments are automatically renewed, unless you cancel 6 or more days prior.
If it doesn't work - turn off popup blocker on your phone or bring in a laptop to connect to hotspot and do it. I had to use a laptop.

However, somehow my iphone is unable to access the internet using the car as a hotspot. I spoke with Telekom on the issue and they advised me to contact Mercedes support. Mercedes support advised me to contact Telekom, so I am stuck in a loop here. Does anyone have any idea how to get Internet access on my iPhone using the car's hotspot? I thought it'd be as simple as just connecting to its wifi.

Turning Low Data Mode on/off (seems on by default when joining this SSID) has no effect.
