I'm back after a lengthy break. Traded my 2013 S550 in for a '23 S500 built on the AMG line. I've only got a 108 miles on it so far, but as of now there is really a LOT to like about this car. The techy upgrades over a decade are mind-boggling. The ECO thing is annoying however.
I still am reading the manual trying to figure things out. One question, I did find sport mode and selected all the settings. Drove the car and when I started it later today it had reverted back to comfort mode. Is there a way to keep the setting permanent?

The start up in previous works pretty well. I'd try just the drive and steering on sport in individual and see what you think, it keeps the ride the way most will want and it fixes the extremely poor throttle response at tip-in and the ridiculously over boosted steering. You can grab the start up with previous settings at /settings/vehicle/dynamic select. There you can set up individual as you wish and the select the remember last setup at start which will also keep the start/stop settings. This shows up as a toast at the top of the center screen but like everything with this car there are a few things...
For it to work you must have a profile and the profile must be loaded. As you've probably already figured out there are a lot of good reasons to have a profile and they are very easy to enable, but if you haven't, I'd recommend setting one up. Once done you can enable with voice, facial rec, or fingerprint. I'd go fingerprint because it's very reliable and fast making it easier to fit into your startup ritual. It matters because you have to wait for the profile to load before you can get the toast to use your previous drive mode: You'll see what I mean when you start using it, but you have to watch for the previous drive mode toast when you start up, or you'll miss it because it timers out.
You also won't get the toast if your significant other starts trying to play with the tunes before the toast comes up so you have to bat her greedy hands away from the screen until you get it. While I haven't figured out exactly what you can get away with many things you do with the center stack will prevent the toast from loading so it's a good idea to work your startup procedure so that the toast is there when you want it. I get in, hit the start button, drop down in the same motion to hit the fingerprint scanner, depending on jacket toss in back or hang, put on my driving glasses, and by then the toast is up and I can tap it and move on to whatever else I want to do. There are probably a lot of ways to skin that cat, you just need to sort out what works with how you want to do things so you don't inadvertently dismiss the toast or have to stare at the screen waiting for it.

The super sized manual isn't quite ubiquitous in the car business but it's well on it's way; actually seems like it's becoming a norm with a lot of gear. I use an electric razor sometimes when I'm traveling and the old one was getting long in the tooth so I had my good friend Amazon hook me up. Arrived today and the manual is sitting on the counter right now, looks to be something like 30 pages. One button turns it on, same button turns it off. Pop the lid to clean. That's it. To my way of thinking if someone needs to read the manual to learn that they shouldn't shave with an electric shaver in the shower while plugged into an electrical outlet to charge wouldn't it be a good thing if they did just that?

Streamliner, next time you go into Fletcher for a maintenance visit or software upgrade, ask for the S500 loaner. I had it for a couple of days and found my 580 was far better. But, just my opinion! This will give you the opportunity to compare with yours. You will have to ask for it.
