'03 e500 goes "clickety-clack"
Most likely what your hear is a little noise from the valves. Depending on how the car was driven up until now and what maintenance there might be a little wear on either the cams or valve stems. It should not be much but enough for you to sometimes hear it. If you can live with the clicking then don’t worry about it.

One dealer claims the problem is a result of carbon build up, and it's common. Another dealer says it could be the engine mounts.
Any other thoughts are appreciated.

The clicking might be the two metal bolts touching but if that is the case it should be more than just the clicking. It should feel like the motor is about to jump out of the engine bay when accelerating and really bad when idling due to the engine rocking on the mounts.

Meanwhile, the MB dealer won't tell me if the purge valve has been replaced. They claim that information belongs to the previous owner!
I don't think a dealer should give you the previous owners name and address, but that info is available to you elsewhere if there's a good legal reason for you to have the info.
Thats a bogus snub by your dealer's service department. A car has no Legal "Privacy Rights".
