In my opinion, most cars are worth restoring. We need a ton more details to say whether or not this car is worth it. That said, SL500's are desirable models.

-Options/modifications/aftermarket parts

how to make engine roar loud?

 

Remove the exhaust system and add back pieces until you attain your desired loudness.

Just be aware that mileage does suffer without sufficient exhaust parts.

 

If you want to go the AMG route for exhaust mods, I have a resonator delete and the larger (standard V12) muffler.
