1990 Mercedes 300 SL R129
1990 300SL R129 Throttle stuck in high immediately after starting

I recently had to replace my oil filter housing gasket to access it I had to remove basically from the air filter housing all the way to the manifold, job is done I put it back together but when I started it, the RPMs immediately spike up to 3,4,5 and keep climbing, I have taken it apart and back together 5 times can’t seem to find the mistake I did, anyone have an idea what can be causing my RPMs to climb like I’m holding the gas pedal in?

Sounds like your throttle actuator linkages are operating properly and not stuck, including the cable.
After that disconnect the IACV idle control valve actuator and tell us what happens.

Thank you for the info and I unplugged the IACV and the results are the same but another thing I’m not sure about is, that the throttle cable isn’t causing any tension therefor it’s not clicking in the small rod at all if that makes any sense.

Yeah, there is something seriously wrong with the throttle actuator. I would get that fixed first. Your IACV is not even involved as your car is never in idle.
