500SL vs 560SL? Which should I buy?

Looking for some advice. I currently have a UK (right hand drive) 1986 500SL which I keep at my house in Spain. I have owned the car for 4 years.

My uncle has a US Spec 1987 560SL in Spain that he is thinking of selling. I was debating buying his car & selling mine as 1) The 560 is Left Hand Drive, which is better for Spain & 2) It is registered on Spanish licence plates, which is better really.

What are people’s opinions of the 500 VS 560? I have driven the 560 a couple times & never noticed much difference in performance, but is there a noticeable difference? If so, can the catalytic converters etc be removed to free up some extra power?

I would change the US bumpers & head light for Euro Spec ones. Does anyone know the cost of this, I’ve heard everything from $2k - $8K

1982 mercedes 500sl
I would stay with the 500sl its a much better car in my opinion and its rare for being a right hand drive
