Is is possible to place a 2001 E55 in Dyno Mode through the instrument cluster? I was able to press the Reset button until I heard the beep, and it displayed some diagnostic information. Then, holding the down arrow for about 5 seconds displayed a new page of information, but I didn't see anything for ESP, Dyno Mode, etc. The + and - buttons still controlled the radio, and did nothing with the radio off.

i believe you have to hit the "R" button till you hear the beep and see the secondary menus (which you have done already). once they are up, toggle between them with the arrow buttons-the ones you'd use to adjust the brightness of the gauge cluster. use them to turn it "on". but leave it on when shutting the car off as it will reset itself back to off. if you turn dyno mode off before shutting the car off, it will stay in dyno mode. this is what i have heard from an MB tech.
