Will the 2007 E63 wheels fit a 2000 E55.

Yes but you will need different mounting bolts because the ball seat on the W211 wheels is larger. Do a search in here and you'll find the specs on the bolts because I looked in my notes and can't find the info.

the W211 rim is designed for use with 14mm lug bolts with 14mm radius ball seat.

your W210 uses smaller 12mm lug bolts with 12mm radius seats.

bottom line: you'll have to find some bolts which use 12mm diameter bolts with 14mm ball seat.

These guys have these bolts 12mm with 14mm ball seats, they are the same specs as the OEM bolts , dont go for the other aftermarket chrome ones elsewhere, I dont trust them.
