Keep in mind that both Eric and I shoot in RAW meaning the camera dumps what the sensor sees as uncompressed data straight to the memory card. The camera itself does not make any adjustments to saturation, white balance, contrast, sharpness, etc., so what you get is a flat/neutral looking picture by default. You do the adjustments after, at home, during the RAW conversion process and in Photoshop itself. Photoshop uses better algorithms and methods (less destructive when used properly) than most in-camera processors.
The RAW file is pretty much like a negative in film speak and allows you to do whatever you want with it afterwards using the RAW converter software of your choice. Well, almost whatever you want as you still have to get a decent snapshot. It will not help you if you have blurry pics due to camera shake. I use Adobe's RAW converter since I know what values to use off the top of my head without much guesswork. There are better converters out there but "better" is subjective.
Most point and shoot (P&S) cameras do not offer RAW as a choice of file type/quality. Canon used to, as my Pro1 had that option, but they started ripping out RAW support with their latest higher end P&S's such as the G7 and S3 IS so it's safe to say RAW is usually only limited to dSLR's. Your wife's Nikon D200 definitely has RAW support so she has the option of using it if needed.
I won't get into too much detail as to why/when to use which (JPEG/RAW) because I can go on forever but if you or anyone is interested I can elaborate. Just keep in mind RAW will offer you flexibility where JPEG usually does not.

my wife also takes all her pictures in RAW + JPEG. She mostly takes pics of the kids and stuff. She's been taking some online classes and just "Understanding Exposure" from ppsop.com. I need to show her your pics to inspire her!!!

I personally dont like the D200 and prefer to use the D70 because I like the green square auto mode. My pictures usually suck and arent framed well (see sig pic lol)
I think you're skills are well above par based on previous pics you've taken. If you're still learning, I cant wait to see your pics when you got it all figured out!!

Ling, I think they're weekly assignments with mostly text and forum discussions. I think each week they have different assignments that focuses on different skills. You need to submit your assignments for critique every week.
