Well...... so far so good.
Watched the YouTube video about how to remove the rearview mirror and overhead console, though reading through some of these DIY posts it looks like removing the mirror was not required.
I threw my DMM on a few wires and was able to find a +12V unswitched source pretty easily:
These are on the drivers side of the console (1 of 4 plugs adjacent to each other on that side). This one has some good thick (~ 16GA) wires in it and the brown/red stripe is a constant +12V source. It's in the black molex connector in this photo.
It's a bit intimidating to see just how many flex circuits and wire looms are actually in that small console, but I'm sure that with a little care and luck I will be able to get everything back into position once I've got the V1 adapter tapped-in.
For now, I'm driving around with no console and the following message on my dash:
