Speaking of emblems, I just got mine out of a full detail today and the "55" ones came off. I actually considered leaving it as E ... AMG but it looked too uneven. It looks like a 63 but dang am I proud to rock the 55 badge! We put them back on with new 3m. Heres an old pic:

If you are serious about an M5 do a search and read up both here and over at their forum. I never was interested because the M5 has so little torque. But if you want torque then the E55 might be the way to go.

I found a 2007 E63 with 42K miles but no price, whats a fair price for this car, also are there any buttons in the interior that show it has the P30 option? Is it more fun to drive than the M5? How much quicker is the E55 over the E63? thanks

Fair price is 35 to 40K depending on condition and miles, check ebay. No buttons that I am aware of on P30. I've heard the M5 handled well but never tried it. The E55 is quicker, the E63 has a smoother power feel, the E55 is the BEAST!!!

Search is your friend (especially on AMG forums). That said, run a carfax or vmi report from the SA based on the VIN you supply. As far as your other question, M5 has different handling from an E63/55, different comfort levels, and well different concept basically at the core. Drive both if you can and decide what you really are comfortable with because at the end of the day you are purchasing it and you will be driving them.
Oh and +1 to what sack5000 said about the P30 package, its rather overpriced imo especially if you're a driving the roads in cali. There's pretty much no where you can go and just let loose the gas all the way to its max speed so why bother? You're going to get ripped on its price as there are fewer of them sold than the P1/P2 packages and as mentioned those folks who have them are going to drive them much harder than some folks who will barely drive their cars and keep them as garage queens.
