I have the black maple wood in my car with the black interior. While I like the wood, I think the brown wood looks very nice. Maybe the black wood looks sportier, but the brown wood definitely more luxurious. But personally, I wouldn't pay an extra amount of money to get the brown wood when the black wood was already included.
Painting it piano black may be what you want, but maybe you should consider just getting a set of the black wood off a parts car (there are some on this forum) and seeing how you like the black wood.

yeah.. prefer the dark wood for sure.//... how much does a set of trim from a parts car usually bring? I figured it was expensive, so that's why I was gonna paint mine black.

From the dealer, thousands of dollars. From a used parts car, around $200-300 assuming all tabs and clips are intact.
The brown wood is nice. But if you were going to go through the trouble to change it to a different color, I guess you probably prefer the black wood strongly. The Designo wood was an option back then, not an expensive option (IIRC around $300), but it wasn't free IIRC.

mine is WAY darker... and like violet/red/purple. blends in very nicely with the black parts of the seat.

Those seats depicted that E500SLR are selling are certainly re-upholstered.
You can tell due to these facts:
1. Leather panel lines are crooked
2. AMG logo is possibly crooked.
3. Texture of center leather is not typical Mercedes-Benz Nubuck. Australia-based E55s did get nubuck leather.
4. The perforations in the colored portion of the leather are round in this example. They're supposed to be square in shape, larger in size, and have greater distance between one another.
5. Airbag warning label appears to be a soft cloth tag, this method to show the airbag's presence was not used by Mercedes-Benz in any market during the years the E55 was produced.
Go look at your own seats and compare, you might not have noticed your leather perforations were square in shape, but you will now.
