Can anyone recommend brake pads and rotors?

I am uncertain due to the note that says "Rear ~ 360mm Diameter Cross-Drilled and Slotted Vented w/o AMG Ceramic Brakes"
I have to admit that I do not know what that "without AMG ceramic brakes" means. The calipers are painted red, does that mean these rotors are not for my model?

You do not have the AMG Ceramic Brake option, as your stated that your calipers are Red, the Carbon Ceramic Brakes are an option for your vehicle but the calipers are gold and the rotors are very, very expensive to replace.
The ceramics have superior braking performance as compared to the steels that we have. And they are lighter and have a 40% greater overall rotor and pad life. The rear Brembo rotors from AutohausAZ are nice, and are the right part, but if you plan to keep this vehicle, I would purchase them from FCP Euro.
As they offer a lifetime replacement on all their parts, just send them back their old worn out used parts, and they will send you a new one. No questions ask. I would also change your brake pads to a ceramic, they mitigate brake noise and dust. The only drawback, is that they do not have that great initial bite that the OEM pads have. But you don't have to clean off the brake dust everyday.

But 500 clams for a battery? No thanks I can self serve that. 350 for eng air filters? Nah I'm good. 1200 rear brakes and pads? Nah bro I think I can get that done properly... Did same job on my infiniti g37s so hopefully this car isn't much more complicated.
So now I'm back down to 2400 which gets most of my 50k service done. Previous owner never did 30k tranny maintenance so I'll tackle that next month.

As far as brakes, there pretty straight forward, and not difficult at all. But you'll need a Brake Pad/Piston compressor This is what I use, and it works great, besides it's cheap.
A good rule of thumb that I live by:
Engine Oil/Filter and Air Filters every year, I do mine every 6 months
Brake Flush every 2 yrs
Engine Coolant every 4 years
Transmission Flush every 4 yrs
Rear Differential every 4 yrs
I understand that you want to start with a clean slate, to ensure that everything has been addressed, and I don't blame you. Did you receive any maintenance records with the vehicle?
Because if it has, then you can move past that. Besides from having maintenance records, I also created a spreadsheet, where I document everything.

From your response above, sounds like you were never able to experience the 2-piece rotors in good condition so you may not be able to make the comparison between the two but...
did you experience performance issues with 1-peice? Did they perform flawlessly/ as expected, have good bite, etc? Did they hold up well? Rust? Any negatives? What pads did you use?
Lastly, do you track the car or anything or just daily drive?
I ask because I have an E63 as well and have been debating. It’s hard for me to justify the price of the 2-piece over the 1piece if weight is the only real downside.
When I bought the car, the rotors were not super thick and I knew I would have to replace rotors next pad service. The pads are def not OEM as the dust is low however I am not sure what brand they are. I have never been blown away with the brake performance but it’s probably just because rotors being at minimum spec and unknown aftermarket pads that may just suck. The initial bite isn’t what I want it to be. I want to lightly tap the brakes and fly forward in my seat, ha!

And the only pad, that I've experienced that has that great initial bite has been the Semi-Metallic Pads.
The down side, is all the brake dust, and the increased rotor wear.

That can be used for both the front and the rear calipers. There are plenty of videos on youtube about AMG brakes. I would also check your serpentine belt, idler pulleys and belt tensioner for excessive play. Maintenance doesn't need to cost and arm or a leg. Find yourself a reputable MB Independent Shop, and have them perform your big ticket items. You tackle the smaller jobs. Once all of your maintenance items are accomplished, then you just have to maintain it, and fix things as they break.

Although it doesn't help you, if services were performed at Indy shops, as Mercedes can't track that.

When I do the brakes again, I actually want the lighter rotational weight up front. I'd say these single piece rotors are at least 3x's heavier than the Brembos, so when it's time I will switch back and have a better comparison.
When I purchased my E63 a few months back I did a lot of maintenance and I couldn't justify the expense and the reviews were great.
The only downside is the weight, they stop great and are a great value. Lift at the legs if you're doing the work yourself lol.

i always using "EBC" Blue or Yellow stuff pads, they are reliable & super power stopping than OEM's,
if you want less dust & better stopping than "Akebono's", go with "EBC" Red stuff,,
"EBC" makes pads application for all F&R "W211 E55/E63"..

He does all my work on the side, usually for no labor as well. He rents from me and gets extremely cheap rent for this area, so it works out.
