Fab shop in NY?
Anyone can recommend a fab shop in NY? Most of the ones that are “good” seem to be busy around this time or just heavily lacking communication skills.

No recommendation, but a suggestion. These types of companies are not exactly modern-era in their business practices, for example regarding communication.
Physically visit them during business hours, as early in the day as possible. That way you have a better chance that the Estimator or Engineer or Owner will be there, who can answer your questions.
Phone and email are nearly guaranteed to be unsuccessful.
What exactly are you looking for? A one-off part or a small production run? Or a large production run?
