It is normal for the fan to stay on in high mode after shutting off engine for a couple to a few minutes when it’s pretty hot out or if you were doing some hard pulls prior.

nah it’s always on even when the engine is cold at cold start the fan turn on on high speed and never shut off till the battery dies
coolant temp sensor (you're going to hate replacing this)

Both are scannable things once you get a decent scanner. not an AMG specific or even a Mercedes specific thing. It's just annoying car things from newer cars that run off 200+ sensors
Can't tell you which one it is cuz I can't tell you how you broke it. Gotta just read data to pinpoint what it is, aka grab a good scanner that reads make-specific data.
