In addition, check the radiator coolant level. I seriously hope you don't have to replace the replaced radiator.

I discovered that you actually can’t get a temp reading for coolant. The temps in the AMG gauges are for gear and engine oil.

Under the Service menu, there's a Coolant submenu. It shows temperature from C to H, without numbers oddly.

The coolant temp gauge(s) for the high temperature (engine) circuit are "dummy" and dont report values the same way as the oil and transmission temperature sensors. Normal operating temperatures are "in the middle"
Generally speaking, high speed secondary fan is normal after running at high loads.
Where there should be concern is when it is consistent, and when you see the secondary (low temperature trans/charge air) cooling circuit going into the 100*C range quickly and consistently with high fan speeds. You can do a visual inspection of the coolant bottle under the engine cover as well, this level should never fluctuate below minimum unless there is a leak (punctured secondary radiator).

I am thinking that when they changed the radiator out that something has gone wrong with one of the sensors causing all of the fans to come on. I hadn't been driving the car hard on these occasions and it had had a fair amount of time to "settle" down.

My commute is less than 5 miles. The fans are typically running after I park the car in the garage and I know the car isn't even fully warmed up.
I think they shut off fairly soon after I turn off the car, but I don't typically wait around for it to happen.
