designo South Seas Blue E63S - Reverting to stock wheels (and ride height?)

Picked up this unique E63 over the weekend and although I'm impressed at how flush the fitment is without rubbing I want to revert back to stock. A few questions for anyone that would be so kind - but let's start with some info.

Wheels are ADV.1 ADV05 Track Spec Advanced Series - which are evidently some fancy wheels that cost ~$4K each.
Fronts are stock size I believe - so a 20x9.5 running 265/35ZR20 tires but with pretty massive H&R spacers.
Rears are +1 - 21x10 (I think) running 285/35ZR21 tires - 10mm narrower than stock but about ~7% taller. My guess is they had to go narrower to avoid rubbing.

Onto the questions:

Does it look lowered as well? Since rears are taller I'm not 100% but looks a little low me.

If it was lowered, what is best way to go back to stock? Can dealer just code back to factory or do I need to get a lowering module to raise back up?

Are these wheels desirable? I'm a huge car nerd but my first AMG and not really up to speed on what is en vogue here.

And unrelated, but any idea how many of these exist in South Seas Blue? I've never seen one before...
