Rolling rear fenders
I have 19x9.5 w/ 275/35s on the rear and there's occasional rubbing, even when driving on SportII mode (stiffest damper setting). I'm assuming it's pretty safe to roll the rear fenders on an S500, like any other car, as long as it's done correctly. I've checked other posts and some other MB owners seemed to have it done as well.
Any words of advice before I have this done re: rolling fenders? Should I go to a smaller tire instead (i.e. 265/35s which is 3/10ths of an inch shorter in overall diameter vs. 275/35s) and see if that works first? Any advice is appreciated.

why would you run a shorter tire than the factory recommended size? It's like fitting 22's on an S-Class... will it physically fit the car? yes. Is it a proper fitment? nope.

275/30R19 is a W211 tire. 275/35R19 is the recomended size for the rear of a W/V220 S-Class. Roll the fenders. Even AMG rolls the rear fenders from the factory. It is the proper install for this fitment.

I have the same set up on my S-class and had the same occational problem and did not roll the fenders. The tire sizes you have are correct for the 19" set up. I had the dealer check the alignement and they found no issues. So after about 7K on the tires and time for a change, I decided to play with the tires and suspension set up vs. rolling the fenders.
Not a tire expert, but once I removed the Bridgestone Pole Positions S-03's and went to the Goodyear F1's and then later the Dunlops Sport Max, no issues. I also had the car suspension aligned - not by Mercedes, but an alignment specialist.
You might want Mercedes to check the air shocks as well. There was a factory advisory check a while back.
Not sure this helps, but it I have no issues

I run these same sizes with 20's and my car is lower then yours and it is fine
so w/ 19's and rolled fenders you will love the handling and look better.
ps. I ran this 19 setup I mentioned above before I changed to 20's and it was perfect.
