Harsh ride with 19 + 20" wheels?

For people that have 19 or 20s. How bad is the ride compared to 18s? Any rubbing issues? What is the best offset for a 01 s500?

If you want the wheels & tires to be flush with the fender line on an `01 S500,

8.5x19 ET38 (245/40R19) Front
9.5x19 ET38 (275/35R19) Rear

9.0x20 ET38 (245/35R20) Front
10x20 ET38 (275/30R20) Rear

This will be the most aggressive fitment, and fender rolling is recommended to prevent rubbing issues. The ride is fine with the 19's. The suspension is designed for it, as there are 19" optional AMG factory wheels made for this car. 20's are a bit more extreme, but the ride is still fine. Alot will depend on which tires you choose. If you want to avoid fender rolling with 19's, the AMG fitment is 8.5x19 ET44 and 9.5x19 ET46.
