As of now, I can't see out of my rear window. If I tear out all of the headliner fabric, I have chunks of yellow glue falling on everything. The sunroof shade is a black plastic board that I removed, but what about the headliner piece itself? I see it's a thin wood.. Will my roof handles, overhead dome, etc, still be able to stay in place without a headliner? Or is that what it all hangs onto? I wanted to just pull everything out..

I'd assume that everything would be bolted to something more that the headliner board. That doesn't seem substantial enough to for the panic handles. Most cars don't use it for anything other than cosmetics, so I wouldn't think Mercedes would.
The dome is held on with the headliner.. I guess it's light enough. Is anything important going through that thing? I may just disconnect all wires and go without a dome for a few days until I get a new headliner. Right now it's just hanging there.

Are you recovering the old headliner board, or getting a new one? If you're just getting a new one, you could cut enough off the front to support the dome.

You should be fine. If the dome light gets in your way, just unplug it. You'll hear a little more highway noise, but other than that... Can't think of why you couldn't drive around without it for a few days. You should be able to re-install the handles, they are typically screwed into the metal part of the roof.
One thing to consider is any curtain (above the door) air bags if your car came with them... not too familiar with the c240.

Yeah, I see the curtain airbags. They taunt me.. lol
The dome is just hangin' out. Hopefully there's nothing more to it than just power to sensors for the wiperblades, etc. There aren't any airbag sensor wires in there right? I see two strands of wires going along the front pillars into the engine bay.

No Sir. No side air bag sensors (or any) up there. As far as the front... Mirror dimmer, front dome lights (if you have them), microphone (if you have it) and rain sensor wires. You should be fine. Just don't stop on RailRoad tracks. 
The wires you see up there are likely the wires that carry current to "fire" the air bags when the electronics decide you're being t-boned.

I'd be VERY careful there. Airbags have been known to go off with electrostatic discharges. Rare, but it happens. If you DO decide to unplug them, your air bag computer may start giving you the fits. Airbag light will definitely be on in the instrument panel.
You must take greater care when you plug the air bag connectors back into the wire loom. I ALWAYS disconnect the battery and turned the lights on to try and deplete any stray current that may be "hanging around" the electrical system before I plug them in. But that's just me. Paranoid about being sucker punched by a bag that inflates at 200MPH while I'm trying to install it.

I thought it was the 870. I must have been thinking of the 850 Series. I know, 2 door instead of 4 door, the 850 hasn't been made for 11 years, etc.
