oil change for 05 c55

Yes - the red cap is the oil tube. Get a dipstick (see my other post for the part number) and the correct fill is to 160mm on the stick. 9qts should get you right to that reading.
You can't get the remaining approx. 1.5qts out. Best way for C55s is to drain the oil. Remove the underpan - drain oil from BOTH drain plugs. Remove filter assembly and replace filter with FLEECE filter only. MB OEM and Bosch 72204 are both the OEM Mann fleece filter. Also replace all o-rings and coat with motor oil before re-fitting the assembly.
Take your time - it's pretty straight forward.

Since I'm at it ... ever do the tranny fluid?

it'z zee MB229.51 ... not zee MB229.5 spec!
I'm assuming the +.01 version (Mobil1-ESP Formula M
), you're referring to, is specifically for the 2005+ AMG motors ... ?I'm wondering what the difference is ... probably an additive package.

MB gave no explanation as to the difference in formula, but I'm with you that in addition to the 0W going to 5W (very minor cold weather weight rating), that it's most likely an additive package.
